White Cheddar and Spinach Chicken Burgers

Ingredients
  

1 pound ground chicken

1 cup fresh spinach, finely chopped

1 cup white cheddar cheese, shredded

1/4 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil (for frying)

Burger buns (4, preferably whole grain)

Fresh spinach or arugula (for topping)

Sliced tomatoes and red onions (for garnish)

Optional: aioli or your favorite sauce for serving

Instructions
 

In a large mixing bowl, combine the ground chicken, chopped spinach, white cheddar cheese, breadcrumbs, Parmesan cheese, minced garlic, onion powder, oregano, salt, and black pepper. Mix until all ingredients are well incorporated, being careful not to overmix.

    Divide the mixture into four equal portions and shape each portion into a patty about 1-inch thick.

      Heat the olive oil in a large skillet over medium heat. Once the oil is hot, add the chicken patties to the skillet. Cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the patties are golden brown.

        While the patties are cooking, toast the burger buns in a separate pan or in a toaster until lightly golden.

          Assemble the burgers by placing the cooked chicken patty on the bottom half of each toasted bun. Top with fresh spinach or arugula, sliced tomatoes, and red onions. If desired, add aioli or your favorite sauce on the top half of the bun.

            Place the top half of the bun on the assembled burger and serve immediately, garnished with extra spinach or salad on the side if desired.
