1 lb ground beef

1/2 lb ground pork

1 cup mashed potatoes (prepared)

1/2 cup shredded cheddar cheese

1/4 cup cooked bacon bits

1/4 cup green onions, chopped

1/2 cup breadcrumbs

1 large egg

2 tablespoons Worcestershire sauce

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

1/2 cup barbecue sauce (for topping)

Additional cheese and bacon for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

    In a large mixing bowl, combine the ground beef and ground pork. Mix in the prepared mashed potatoes, shredded cheddar cheese, bacon bits, green onions, breadcrumbs, egg, Worcestershire sauce, Dijon mustard, garlic powder, onion powder, and season with salt and pepper.

      Use your hands to mix everything together until well combined, but be careful not to overmix as this can result in a dense meatloaf.

        Shape the mixture into a loaf and place it on the prepared baking sheet, or transfer it to the loaf pan if you prefer a softer structure.

          Spread the barbecue sauce evenly on top of the meatloaf for a delicious glaze.

            Bake in the preheated oven for approximately 45-55 minutes, or until the internal temperature reaches 160°F (70°C).

              Once cooked, remove from the oven and let it rest for about 10 minutes before slicing.

                Optionally, top with additional shredded cheese and bacon, and pop it back in the oven for 5 minutes to melt.

                  Serve slices warm, garnished with extra green onions if desired.
