Tuscan Chicken Pasta Recipe

8 oz penne pasta

2 boneless, skinless chicken breasts

2 tbsp olive oil

3 cloves garlic, minced

1 cup sun-dried tomatoes, chopped

1 cup baby spinach

½ cup heavy cream

½ cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

Fresh basil, for garnish (optional)

Instructions
 

Start by cooking the penne pasta according to the package instructions until al dente. Drain and set aside.

    Season the chicken breasts with salt, pepper, and Italian seasoning on both sides.

      In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side or until golden brown and cooked through. Remove from skillet and let rest before slicing.

        In the same skillet, lower the heat to medium-low and add the minced garlic. Sauté for about 1 minute until fragrant, but not browned.

          Add the sun-dried tomatoes and cook for another 2-3 minutes, stirring occasionally.

            Add the baby spinach, and cook until wilted, approximately 1-2 minutes.

              Pour in the heavy cream and stir well, bringing the mixture to a gentle simmer.

                Gradually stir in the grated Parmesan cheese until melted and the sauce is creamy. Adjust seasoning with salt and pepper to taste.

                  Slice the cooked chicken and add it back to the skillet, along with the drained penne pasta. Toss everything together until well combined and heated through.
