Tropical Pineapple-Glazed Chicken Recipe: A Sweet and Savory Delight

Ingredients
  

4 boneless, skinless chicken breasts

1 cup fresh pineapple juice

1/2 cup brown sugar

1/4 cup soy sauce

3 tablespoons apple cider vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon cornstarch

2 tablespoons water

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

Fresh pineapple slices, for grilling (optional)

Chopped green onions and sesame seeds, for garnish

Instructions
 

In a medium bowl, combine pineapple juice, brown sugar, soy sauce, apple cider vinegar, minced garlic, grated ginger, salt, black pepper, and red pepper flakes if using. Whisk until the sugar is dissolved.

    Reserve 1/2 cup of the marinade for later use, and pour the remaining marinade over the chicken breasts in a resealable plastic bag or shallow dish. Marinate the chicken in the refrigerator for at least 1 hour, or overnight for best results.

      Preheat your grill or grill pan over medium heat. Remove the chicken from the marinade and discard the used marinade.

        Grill the chicken for about 6-7 minutes on each side, or until cooked through and the internal temperature reaches 165°F (75°C) and juices run clear. If using pineapple slices, grill them for about 2-3 minutes per side until caramelized.

          While the chicken is cooking, take the reserved marinade and bring it to a boil in a small saucepan over medium heat. In a small bowl, mix cornstarch and water to create a slurry, then slowly whisk it into the boiling marinade to thicken. Allow it to simmer for a few minutes, stirring frequently.

            Once the chicken is cooked, brush the thickened glaze over it or serve it on the side. If grilled, garnish with grilled pineapple slices.

              Serve your Tropical Pineapple-Glazed Chicken over a bed of fluffy jasmine rice or with a side of steamed vegetables. Top with chopped green onions and sesame seeds for a beautiful finish.
