Ingredients

1 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/4 cup granulated sugar

2 tablespoons brown sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 large egg

1 cup buttermilk (or regular milk with 1 tablespoon vinegar added)

2 tablespoons vegetable oil (or melted butter)

1 teaspoon vanilla extract

1/2 cup chocolate chips (semi-sweet or dark)

Optional: whipped cream and fresh berries for serving

Instructions

Prepare the Batter: In a large mixing bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, baking soda, and salt until fully combined.

Mix Wet Ingredients: In a separate bowl, beat the egg and then add the buttermilk, vegetable oil (or melted butter), and vanilla extract. Whisk until well combined.

Combine Mixtures: Pour the wet mixture into the dry ingredients. Stir gently with a spatula until just combined. Be careful not to overmix; the batter should be slightly lumpy. Fold in the chocolate chips.

Heat the Pan: Preheat a non-stick skillet or griddle over medium heat. Lightly grease with butter or spray.

Cook the Pancakes: Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the top and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes on the other side until cooked through and slightly puffed.

Serve: Stack the pancakes on a plate, adding extra chocolate chips on top if desired. Serve warm with whipped cream and fresh berries.

Prep Time: 10 minutes | Total Time: 20 minutes | Servings: 4 (makes about 8 pancakes)
