Ingredients
  

1 lb (450g) boneless chicken thighs, cut into bite-sized pieces

2 tablespoons vegetable oil

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

½ cup soy sauce

¼ cup honey

2 tablespoons rice vinegar

1 tablespoon fish sauce

1 teaspoon chili garlic sauce (adjust for spice level)

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

¼ cup fresh basil leaves, chopped (for garnish)

2 green onions, sliced (for garnish)

Cooked jasmine rice or rice noodles (for serving)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the soy sauce, honey, rice vinegar, fish sauce, and chili garlic sauce. Add the chicken pieces to the marinade, making sure they're well-coated. Let it marinate for at least 30 minutes for maximum flavor.

    Sauté Aromatics: Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the minced garlic and grated ginger, sautéing until fragrant (about 1 minute).

      Cook the Chicken: Add the marinated chicken pieces to the skillet. Cook for about 5-7 minutes until the chicken is browned and cooked through, stirring occasionally.

        Add Vegetables: Add the sliced bell peppers and onion to the chicken, cooking for an additional 4-5 minutes until the vegetables are tender yet crisp.

          Thicken the Sauce: Pour in the cornstarch slurry (cornstarch mixed with water) to the skillet. Stir well to combine and cook for another 2-3 minutes until the sauce thickens and coats the chicken and vegetables nicely.

            Serve: Remove from heat and stir in the chopped basil leaves. Serve the Sweet and Spicy Thai Chicken over cooked jasmine rice or rice noodles, garnishing with sliced green onions.
