Ingredients
  

2 large red onions, thinly sliced

4 tablespoons olive oil

2 tablespoons sumac

1 tablespoon honey (or maple syrup for a vegan option)

1 teaspoon salt

½ teaspoon black pepper

Juice of 1 lemon

Fresh parsley, chopped for garnish (optional)

Pomegranate seeds for garnish (optional)

Instructions
 

In a large mixing bowl, combine the sliced red onions with olive oil, sumac, honey, salt, and black pepper. Toss well to ensure the onions are evenly coated.

    Allow the mixture to marinate for at least 30 minutes. This will soften the onions and allow the flavors to meld.

      Preheat a skillet over medium heat. Once hot, add the marinated onions, along with all the marinade.

        Sauté the onions for about 10-12 minutes, stirring occasionally, until they become tender and have slightly caramelized edges.

          Remove the skillet from heat and drizzle the lemon juice over the cooked onions. Toss to combine.

            Transfer the sumac onions to a serving dish and garnish with chopped parsley and pomegranate seeds if desired.
