Ingredients

For the Filling:

2 cups fresh strawberries, hulled and halved

2 cups fresh peaches, peeled and sliced

1/4 cup granulated sugar

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

Pinch of salt

For the Topping:

1 cup rolled oats

1 cup all-purpose flour

1/2 cup packed brown sugar

1/2 cup unsalted butter, melted

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

Pinch of salt

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Fruit Filling: In a large mixing bowl, combine the halved strawberries and sliced peaches. Add the granulated sugar, lemon juice, cornstarch, vanilla extract, and a pinch of salt. Toss until the fruit is well coated. Set aside to allow the flavors to meld while you prepare the topping.

Make the Crisp Topping: In another mixing bowl, stir together the rolled oats, all-purpose flour, brown sugar, melted butter, ground cinnamon, nutmeg, and a pinch of salt until the mixture resembles coarse crumbs.

Combine and Assemble: Pour the fruit mixture into a greased 9x13 inch baking dish, spreading it evenly. Sprinkle the crisp topping generously over the fruit.

Bake: Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown and the fruit is bubbly.

Cool and Serve: Allow the crisp to cool for about 10-15 minutes before serving. It’s delightful on its own, but you can serve it warm with a scoop of vanilla ice cream or a dollop of whipped cream for extra indulgence.
