1 lb flank steak or sirloin, thinly sliced

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper, to taste

2 large russet potatoes, peeled and cut into thin fries

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

4 large flour tortillas

1 cup sour cream

1/2 cup salsa

Fresh cilantro, for garnish (optional)

Prepare the Fries: Preheat the oven to 425°F (220°C). Toss the cut potatoes with olive oil, salt, and pepper. Spread them out on a baking sheet and bake for 25-30 minutes, flipping halfway, until golden and crispy.

    Cook the Steak: In a skillet over medium-high heat, add the remaining olive oil. Season the sliced steak with garlic powder, onion powder, smoked paprika, salt, and pepper. Sear the steak for about 3-4 minutes until browned and cooked to your desired doneness. Remove from heat and set aside.

      Assemble the Burritos: Warm the flour tortillas in a dry skillet or microwave to make them pliable. On each tortilla, layer a handful of crispy fries, a portion of steak, and a mix of both cheeses. Drizzle some sour cream and salsa on top.

        Wrap it Up: Fold in the sides of the tortilla and roll it up tightly from the bottom, making sure to encase the filling.

          Toast the Burritos: Wipe the skillet dry and return it over medium heat. Place the burritos seam-side down in the skillet and cook for 2-3 minutes on each side until golden brown and crispy.

            Garnish and Serve: Remove the burritos from the skillet and let them cool slightly. Slice them in half diagonally and garnish with fresh cilantro if desired. Serve with additional salsa and sour cream on the side.
