Spinach and Feta Quesadillas (20 minutes)

Ingredients
  

2 cups fresh spinach, packed

1 cup feta cheese, crumbled

1 cup shredded mozzarella cheese

4 large flour tortillas

2 tablespoons olive oil

1 clove garlic, minced

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Sour cream or Greek yogurt, for serving (optional)

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Sauté Spinach: In a skillet over medium heat, add 1 tablespoon of olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Add the fresh spinach and cook for 2-3 minutes, or until wilted. Season with salt, pepper, and red pepper flakes (if using). Remove from heat and let cool slightly.

    Prepare the Quesadilla Filling: In a mixing bowl, combine the sautéed spinach, crumbled feta cheese, and half of the shredded mozzarella cheese. Mix well to combine all the ingredients.

      Assemble Quesadillas: Place one tortilla in a clean skillet over low heat. Spread a generous portion of the spinach and feta mixture on half of the tortilla, then sprinkle with some of the remaining mozzarella cheese. Fold the tortilla in half over the filling.

        Cook Quesadillas: Carefully increase the heat to medium and add a little olive oil to the skillet if necessary. Cook the quesadilla for about 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted. Repeat the process with the remaining tortillas and filling.

          Serve: Once cooked, remove the quesadillas from the skillet and allow to cool for a minute before cutting them into wedges. Serve warm with a dollop of sour cream or Greek yogurt and garnish with fresh cilantro or parsley if desired.
