Spicy Pineapple Jalapeño Chutney

Ingredients
  

2 cups fresh pineapple, diced

1 medium onion, finely chopped

2-4 jalapeño peppers, finely sliced (adjust to your heat preference)

1/2 cup brown sugar

1/2 cup apple cider vinegar

1 teaspoon grated fresh ginger

1 teaspoon ground cumin

1/2 teaspoon ground coriander

1/4 teaspoon ground cinnamon

1/4 teaspoon turmeric

Salt to taste

Juice of 1 lime

1/4 cup fresh cilantro, chopped (optional for garnish)

Instructions
 

In a large saucepan, combine the diced pineapple, chopped onion, and sliced jalapeños. Sauté over medium heat for about 3-4 minutes until the onions become translucent and the pineapple is fragrant.

    Add the brown sugar and apple cider vinegar to the pan, stirring until the sugar is dissolved.

      Stir in the grated ginger, ground cumin, ground coriander, ground cinnamon, turmeric, and a pinch of salt. Mix well to combine all the ingredients.

        Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for about 20-25 minutes, or until the chutney has thickened to your desired consistency. Stir occasionally to prevent sticking.

          Taste the chutney and adjust seasoning with salt and lime juice as needed. Remove from heat, and let it cool to room temperature.

            Once cooled, transfer the chutney to a sterilized jar. If desired, garnish with chopped cilantro before sealing.

              Store in the refrigerator for at least 24 hours before serving to allow the flavors to develop fully. Enjoy this chutney with grilled meats, tacos, or as a spread on sandwiches!
