Spicy Brazilian Coconut Chicken

4 boneless, skinless chicken thighs

1 can (13.5 oz) coconut milk

2 tablespoons olive oil

1 onion, finely chopped

4 cloves garlic, minced

1-2 fresh red chili peppers, finely chopped (adjust to taste)

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 tablespoon brown sugar

Juice of 1 lime

Salt and pepper to taste

Fresh cilantro, for garnish

Cooked white rice, for serving

Instructions
 

Marinate the Chicken: In a bowl, combine the coconut milk, lime juice, smoked paprika, cumin, brown sugar, salt, and pepper. Add the chicken thighs, ensuring they're well coated. Cover and marinate in the refrigerator for at least 30 minutes (up to 2 hours for better flavor).

    Prepare the Sauce: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until soft and translucent. Then, add the minced garlic and chili peppers, cooking for an additional 2 minutes until fragrant.

      Cook the Chicken: Remove the chicken thighs from the marinade (keeping the marinade) and add them to the skillet. Sear the chicken for about 5 minutes on each side until golden.

        Add the Marinade: Pour the reserved marinade into the skillet with the chicken. Bring to a simmer and reduce heat to low. Cover and let it cook for about 20-25 minutes, or until the chicken is fully cooked and tender, stirring occasionally.
