Ingredients
  

1 lb ground beef

1 medium onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (15 oz) corn, drained

1 can (10 oz) diced tomatoes with green chilies

1 packet taco seasoning

2 cups frozen tater tots

1 cup shredded cheddar cheese

Salt and pepper to taste

1/4 cup fresh cilantro, chopped (for garnish)

Instructions
 

Brown the Beef: In a skillet over medium heat, cook the ground beef until browned. Drain excess fat and transfer the beef to the slow cooker.

    Add Veggies: To the slow cooker, add the diced onions and minced garlic. Stir in black beans, corn, diced tomatoes with their juices, and taco seasoning. Mix well to combine all ingredients.

      Layer the Tater Tots: Spread the frozen tater tots evenly over the top of the mixture in the slow cooker.

        Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the tater tots are crispy and golden.

          Finish with Cheese: About 15 minutes before serving, sprinkle shredded cheddar cheese over the tater tots. Cover again to let the cheese melt.

            Garnish and Serve: Once cooked, remove the lid, sprinkle fresh cilantro on top, and serve warm. Enjoy your delightful cowboy casserole!
