Skillet Banana Fritters

2 ripe bananas, mashed

1 cup all-purpose flour

1/2 cup granulated sugar

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/2 tsp cinnamon

1/4 cup milk

2 large eggs

1 tsp vanilla extract

1/4 cup chopped walnuts (optional)

Oil for frying

Powdered sugar for dusting (optional)

Instructions
 

In a large mixing bowl, combine the mashed bananas, flour, sugar, baking powder, baking soda, salt, and cinnamon. Mix thoroughly until blended.

    In a separate bowl, whisk together the milk, eggs, and vanilla extract. Pour the wet mixture into the dry ingredients and stir until just combined. Fold in the walnuts if using.

      Heat a non-stick skillet over medium heat and add enough oil to cover the bottom. Allow the oil to warm for a couple of minutes.

        Using a scoop or tablespoon, drop dollops of the batter onto the skillet, leaving enough space between each fritter. Fry for about 2-3 minutes on one side or until golden brown.

          Carefully flip the fritters and cook for another 2-3 minutes until both sides are golden and cooked through.

            Remove the fritters and place them on a paper towel-lined plate to drain excess oil.

              Serve warm, dusted with powdered sugar if desired, and enjoy your delicious banana fritters!
