For the Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lime

For the Mango Salsa:

1 ripe mango, diced

1/2 red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup fresh cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/4 cup Greek yogurt

2 tablespoons mayonnaise

Juice of 1 lime

1 teaspoon chili powder

Salt and pepper to taste

For the Bowl:

2 cups cooked quinoa or rice (optional)

2 ripe avocados, sliced

1 cup cherry tomatoes, halved

Fresh cilantro leaves for garnish

Lime wedges for serving

Instructions
 

Prepare the Shrimp: In a bowl, combine the shrimp with olive oil, smoked paprika, garlic powder, lime juice, salt, and pepper. Toss to coat the shrimp evenly. Let it marinate for about 15-20 minutes.

    Make the Mango Salsa: In a mixing bowl, combine the diced mango, red onion, jalapeño, cilantro, lime juice, and salt. Stir to combine and set aside for the flavors to meld.

      Prepare the Lime-Chili Sauce: In a small bowl, whisk together the Greek yogurt, mayonnaise, lime juice, chili powder, salt, and pepper until smooth. Adjust seasoning to taste. Set aside.

        Cook the Shrimp: Heat a skillet over medium-high heat. Add the marinated shrimp in a single layer and cook for about 2-3 minutes per side, or until they turn pink and opaque. Be careful not to overcook them.
