Shrimp and Avocado Bowls with Mango Salsa & Lime-Chili Sauce

1 tsp garlic powder

1 tsp smoked paprika

Juice of 1 lime

1 ripe mango, diced

1 small red onion, finely chopped

1 jalapeño, seeded and minced

1/4 cup cilantro, chopped

Juice of 1 lime

Salt to taste

For the Lime-Chili Sauce:

1/2 cup plain Greek yogurt

Juice of 1 lime

1-2 tsp chili powder (adjust for spice level)

1 tsp honey (optional)

Salt to taste

For the Bowls:

2 cups cooked quinoa or brown rice

1 avocado, sliced

1 cup cherry tomatoes, halved

1/2 cup corn (canned or cooked)

Fresh cilantro for garnish

Instructions
 

Prepare the Shrimp:

    In a mixing bowl, toss the shrimp with olive oil, garlic powder, smoked paprika, salt, pepper, and lime juice. Let it marinate for about 15-20 minutes.
