1 pound smoked sausage (e.g., kielbasa or bratwurst), sliced into 1-inch pieces

2 bell peppers (any color), sliced into strips

1 medium red onion, sliced into wedges

2 cups broccoli florets

2 cups baby potatoes, halved or quartered

3 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

    In a large mixing bowl, combine the sliced sausage, bell peppers, red onion, broccoli, and baby potatoes.

      Drizzle the olive oil over the sausage and veggies, then sprinkle with garlic powder, oregano, smoked paprika, salt, and pepper. Toss everything together until well-coated.
