1 cup corn (fresh, canned, or frozen)

1 ripe avocado, diced

1 cup shredded lettuce

1 cup diced tomatoes

½ cup sour cream

½ cup salsa (mild or spicy, to taste)

4 large flour tortillas

Olive oil or cooking spray

Prepare the Tortillas: Lightly brush both sides of the flour tortillas with olive oil or spray them with cooking spray. Heat a skillet over medium heat and lightly toast each tortilla for about 30 seconds on each side until they are warm and pliable. Set aside.
