2 cups cooked jasmine rice (preferably day-old)

1 lb boneless, skinless chicken thighs, diced

3 tablespoons soy sauce

2 tablespoons teriyaki sauce

1 tablespoon sesame oil

2 tablespoons vegetable oil

2 cloves garlic, minced

1-inch piece ginger, grated

1 cup mixed vegetables (peas, carrots, corn)

3 green onions, chopped

2 large eggs, beaten

1 tablespoon mirin (Japanese sweet rice wine)

Salt and pepper to taste

Toasted sesame seeds, for garnish

Fresh cilantro or parsley, for garnish

Instructions
 

Marinate the Chicken: In a bowl, combine diced chicken thighs with soy sauce, teriyaki sauce, and mirin. Let it marinate for at least 15 minutes to soak in the flavors.

    Prepare the Fried Rice: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until browned and cooked through (about 5-7 minutes). Remove the chicken from the pan and set aside.

      Sauté Aromatics: In the same skillet, add sesame oil, minced garlic, and grated ginger. Stir-fry for about 1 minute until fragrant.
