1 lb (450g) boneless chicken thighs or breasts, cut into bite-sized pieces

2 tablespoons ghee or unsalted butter

1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon freshly grated ginger

1 can (14 oz) diced tomatoes

1/2 cup heavy cream

2 tablespoons tomato paste

1 tablespoon garam masala

1 teaspoon ground cumin

1 teaspoon ground coriander

1 teaspoon turmeric

1/2 teaspoon cayenne pepper (adjust to taste)

Salt, to taste

Fresh cilantro, for garnish

Cooked basmati rice or naan, for serving

Instructions
 

Sauté the Base: In a large skillet, melt the ghee or butter over medium heat. Add the chopped onion and sauté until softened and lightly golden, about 5-7 minutes.

    Add Flavor: Stir in the minced garlic and grated ginger, cooking for another 1-2 minutes until fragrant.

      Cook the Chicken: Add the chicken pieces to the skillet and cook until they’re browned on all sides, about 5-8 minutes.

        Spice It Up: Sprinkle in the garam masala, cumin, coriander, turmeric, and cayenne pepper. Stir to coat the chicken evenly in the spices, cooking for an additional 2-3 minutes.

          Create the Sauce: Pour in the diced tomatoes (with juices) and mix well. Add the tomato paste and season with salt. Allow the mixture to simmer for 10 minutes, letting the flavors meld.

            Finish with Cream: Reduce the heat to low and stir in the heavy cream. Simmer for another 5 minutes until slightly thickened. Adjust seasoning if necessary.
