Peruvian Grilled Chicken Salad

Ingredients
  

2 boneless, skinless chicken breasts

1 tablespoon olive oil

2 teaspoons smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

Salt and pepper to taste

Juice of 1 lime

4 cups mixed greens (arugula, spinach, and romaine)

1 cup cherry tomatoes, halved

1 avocado, sliced

½ cup red onion, thinly sliced

½ cup corn kernels (fresh or frozen)

¼ cup feta cheese, crumbled

¼ cup cilantro, chopped

½ cup Peruvian green sauce (Aji Verde)

Instructions
 

Marinate the Chicken: In a bowl, whisk together olive oil, smoked paprika, cumin, garlic powder, lime juice, salt, and pepper. Add the chicken breasts and coat well. Let it marinate for at least 30 minutes (or up to 2 hours in the fridge).

    Grill the Chicken: Preheat the grill over medium-high heat. Remove the chicken from the marinade and grill for about 6-7 minutes per side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C). Let the chicken rest for about 5 minutes before slicing.

      Prepare the Salad Base: In a large bowl, combine the mixed greens, cherry tomatoes, avocado, red onion, and corn kernels. Toss gently to combine.

        Slice the Chicken: After the chicken has rested, slice it into strips.
