½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup sour cream

1 cup fresh peaches, diced

1 cup fresh blackberries

For the streusel topping:

½ cup all-purpose flour

½ cup brown sugar, packed

1 tsp cinnamon

¼ cup unsalted butter, cold and cubed

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan or line it with parchment paper.

    Prepare the Cake Batter:

      - In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

        - In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy using an electric mixer.

          - Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

            - Mix in the sour cream until fully incorporated.

              - Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

                - Gently fold in the diced peaches and blackberries into the batter.

                  Prepare the Streusel Topping:

                    - In a small bowl, combine flour, brown sugar, and cinnamon. Mix well.

                      - Add the cold, cubed butter to the mixture and use your fingers or a pastry cutter to mix until crumbly.

                        Combine and Bake:

                          - Pour the cake batter into the prepared pan, spreading it evenly to the edges.

                            - Evenly sprinkle the streusel topping over the batter.

                              - Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

                                Cool and Serve:

                                  - Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

                                    - Serve warm or at room temperature, and enjoy with a cup of coffee or tea!
