One Skillet Salmon with Lemon Orzo

Ingredients
  

2 salmon fillets (about 6 oz each)

1 cup orzo pasta

3 cups vegetable or chicken broth

2 tablespoons olive oil

2 cloves garlic, minced

Zest of 1 lemon

Juice of 1 lemon

1 cup fresh spinach (or kale)

1/4 cup grated Parmesan cheese

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Season the salmon fillets with salt and pepper.

    Place the salmon in the skillet, skin-side down. Cook for about 5-6 minutes until the skin is crispy. Carefully flip and cook for an additional 3-4 minutes, or until the salmon is cooked through. Remove the salmon from the skillet and set aside.

      In the same skillet, add the remaining tablespoon of olive oil and the minced garlic. Sauté for about 30 seconds until fragrant.

        Add the orzo to the skillet and toast for about 1 minute, stirring frequently.

          Pour in the broth, lemon zest, and lemon juice. Stir and bring to a simmer. Cover the skillet and cook for about 10 minutes, stirring occasionally, until the orzo is tender and most of the liquid is absorbed.

            Once the orzo is cooked, stir in the fresh spinach until wilted. Remove from heat and mix in the grated Parmesan cheese.

              Flake the cooked salmon into large pieces and gently fold it into the orzo mixture.

                Adjust seasoning with salt and pepper to taste. Garnish with chopped parsley before serving.
