1 lb (450g) chicken breast, diced

1 tablespoon olive oil

3 cups chicken broth

1 lb (450g) potato gnocchi

2 cups fresh spinach

1 cup cherry tomatoes, halved

Juice and zest of 1 lemon

2 cloves garlic, minced

1 teaspoon dried thyme

Salt and pepper, to taste

½ cup heavy cream (optional for creaminess)

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (for serving)

Instructions
 

Sauté the Chicken: In a large pot, heat the olive oil over medium heat. Once hot, add the diced chicken breast. Season with salt and pepper, and cook until browned, about 5-7 minutes. Remove the chicken from the pot and set aside.

    Cook the Garlic and Veggies: In the same pot, add the minced garlic and sauté until fragrant, about 30 seconds. Add the cherry tomatoes and fresh spinach, cooking until the spinach wilts and the tomatoes start to soften, about 3-5 minutes.

      Add the Broth and Gnocchi: Pour in the chicken broth, and bring to a simmer. Add the potato gnocchi, then return the cooked chicken to the pot. Stir in the lemon juice, lemon zest, thyme, and adjust seasoning with salt and pepper.

        Simmer Together: Allow the mixture to simmer for about 5-7 minutes or until the gnocchi are floating and tender. If you're adding heavy cream for extra richness, stir it in at this point and let it heat through.
