One-Pan Honey BBQ Chicken Rice

Ingredients
  

2 cups boneless, skinless chicken thighs, cut into bite-sized pieces

1 cup long-grain rice (jasmine or basmati works well)

2 cups chicken broth

1/2 cup honey

1/2 cup BBQ sauce (your favorite brand or homemade)

1 medium onion, finely chopped

2 cloves garlic, minced

1 red bell pepper, diced

1 cup frozen peas (optional)

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Chicken: In a large skillet or a deep frying pan, heat 2 tablespoons of olive oil over medium-high heat. Add the chicken pieces and season them with salt, black pepper, and smoked paprika. Sear for about 5-7 minutes, stirring frequently, until the chicken is golden brown on all sides but not cooked through. Remove the chicken from the pan and set aside.

    Sauté the Vegetables: In the same pan, add the chopped onion and red bell pepper. Cook for about 3-4 minutes until the vegetables are softened. Then, add the minced garlic and sauté for another 1 minute until fragrant.

      Add Rice & Liquid: Add the rice to the pan and stir well to coat the grains with the oil and vegetables. Pour in the chicken broth and stir to combine. Then add the honey and BBQ sauce, mixing everything well.

        Return Chicken & Cook: Return the seared chicken to the skillet, ensuring that it is submerged in the liquid. Bring the mixture to a gentle boil.

          Simmer: Once boiling, reduce the heat to low, cover with a lid, and let it simmer for about 25 minutes. If using frozen peas, add them in the last 5 minutes of cooking time.

            Fluff & Serve: After 25 minutes, check the rice for doneness and ensure the liquid has been absorbed. If it’s still too firm, you can add a little more broth and cook for an additional 5 minutes. Once done, fluff the rice with a fork.

              Garnish & Enjoy: Remove from heat, garnish with fresh parsley, and serve hot, drizzling with extra BBQ sauce if desired.
