Mediterranean Salmon

Ingredients
  

4 salmon fillets (about 6 oz each)

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon lemon zest

Juice of 1 lemon

Salt and pepper to taste

1 cup cherry tomatoes, halved

1/2 cup kalamata olives, pitted and sliced

1/4 cup feta cheese, crumbled

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 400°F (200°C).

    In a small bowl, whisk together the olive oil, minced garlic, oregano, thyme, lemon zest, lemon juice, salt, and pepper until well combined.

      Place the salmon fillets in a baking dish and pour the marinade over them, making sure they are evenly coated. Let them marinate for at least 15 minutes.

        After marinating, scatter the halved cherry tomatoes and sliced olives around the salmon in the baking dish.

          Sprinkle crumbled feta cheese over the top of the salmon and vegetables.

            Bake in the preheated oven for 15-20 minutes, or until the salmon flakes easily with a fork and is cooked through.

              Remove from the oven and garnish with freshly chopped parsley before serving.
