2 cups whole wheat pasta (fusilli or penne)

1 lb boneless, skinless chicken breast, grilled and chopped

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, finely chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 tablespoon Dijon mustard

1 clove garlic, minced

Salt and pepper to taste

Begin by cooking the whole wheat pasta according to the package instructions until al dente. Drain and rinse under cold water to cool it down.

    While the pasta is cooking, grill the chicken breast until fully cooked (about 6-7 minutes per side). Let it rest for a few minutes, then chop into bite-sized pieces.

      In a large mixing bowl, combine the cooled pasta, chopped chicken, cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley.

        In a separate bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well emulsified.
