Ingredients
  

2 boneless, skinless chicken breasts

Salt and pepper to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon red pepper flakes (adjust to taste)

1 cup heavy cream

1 cup chicken broth

1 cup sun-dried tomatoes, roughly chopped

1 cup fresh spinach

1 cup grated Parmesan cheese

12 oz fettuccine pasta

Fresh basil for garnish

Cook the Pasta: Start by bringing a large pot of salted water to a boil. Once boiling, add the fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Prepare the Chicken: Season the chicken breasts generously with salt and pepper. In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side, or until cooked through and golden brown. Remove and set aside to rest.

      Make the Sauce: In the same skillet, lower the heat and add minced garlic and red pepper flakes. Sauté for about 1 minute until fragrant. Then add heavy cream and chicken broth. Stir to combine and bring to a simmer.

        Add Ingredients: Incorporate the sun-dried tomatoes and fresh spinach into the sauce. Cook until the spinach wilts, approximately 2-3 minutes.

          Combine Chicken & Pasta: Slice the cooked chicken and return it to the skillet. Add the drained pasta to the sauce and toss to combine, adding reserved pasta water as needed to reach desired consistency.

            Cheese It Up: Stir in the grated Parmesan cheese and mix well until melted and creamy. Adjust seasoning with more salt and pepper if necessary.
