Ingredients

2 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 teaspoon Italian seasoning

1 cup sun-dried tomatoes, chopped

1 cup heavy cream

1 cup chicken broth

½ cup grated Parmesan cheese

½ teaspoon red pepper flakes (adjust for spice preference)

2 cups spinach, fresh

8 oz fettuccine pasta

Fresh basil leaves, for garnish

Extra Parmesan cheese, for serving

Instructions

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, reserving ½ cup of pasta water.

Cook the Chicken: While the pasta is cooking, season the chicken breasts with salt and pepper. In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for 5-7 minutes on each side until cooked through. Remove from the skillet and let rest for a few minutes before slicing.

Sauté the Aromatics: In the same skillet, lower the heat to medium. Add the minced garlic and Italian seasoning, cooking until fragrant (about 1 minute).

Make the Sauce: Stir in the sun-dried tomatoes, followed by heavy cream and chicken broth. Bring to a simmer, then add Parmesan cheese and red pepper flakes. Stir until the sauce thickens slightly.

Combine: Add the fresh spinach to the skillet and allow it to wilt for a minute. Toss in the cooked fettuccine and sliced chicken, mixing everything until well coated. If the sauce is too thick, add a bit of the reserved pasta water to reach the desired consistency.

Serve: Plate the pasta, garnishing with fresh basil leaves and additional Parmesan cheese. Enjoy your delicious Marry Me Chicken Pasta!
