Ingredients

4 boneless, skinless chicken breasts

1 cup buttermilk

1 cup seasoned breadcrumbs (can use Italian seasoned for extra flavor)

½ cup grated Parmesan cheese

½ cup shredded mozzarella cheese

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried Italian herbs (oregano, basil, thyme)

Salt and pepper, to taste

1/2 cup all-purpose flour

2 large eggs, beaten

Olive oil, for frying

Fresh parsley, chopped (for garnish)

Instructions

Marinate the Chicken: In a large bowl, combine the chicken breasts and buttermilk. Cover and refrigerate for at least 1 hour (or overnight for more flavor).

Preheat the Oven: Preheat your oven to 375°F (190°C).

Prepare the Coating: In a shallow dish, mix the seasoned breadcrumbs, grated Parmesan cheese, shredded mozzarella cheese, garlic powder, onion powder, dried Italian herbs, salt, and pepper.

Set Up Breading Station: Place the flour in a separate shallow dish and the beaten eggs in another dish.

Dredge the Chicken: Remove each chicken breast from the buttermilk, allowing the excess to drip off. First, coat the chicken in flour, then dip it into the beaten eggs, and finally press it into the breadcrumb mixture, ensuring it is fully coated on all sides.

Sear the Chicken: In a large skillet, heat enough olive oil over medium-high heat to cover the bottom of the pan. Once hot, carefully add the breaded chicken breasts. Cook for about 3-4 minutes on each side until golden brown.

Bake the Chicken: Transfer the seared chicken breasts to a baking dish. Place in the preheated oven and bake for 15-20 minutes, or until the chicken is fully cooked through and has an internal temperature of 165°F (75°C).

Serve and Garnish: Remove from the oven and let rest for a few minutes before serving. Garnish with freshly chopped parsley for added color and flavor.

Enjoy Your Creation: Serve with your favorite side dishes such as sautéed vegetables or mashed potatoes, and dig into this delicious, cheesy, and crispy chicken!
