Lemon Garlic Shrimp Pasta With Spinach

8 oz spaghetti or linguine

1 lb large shrimp, peeled and deveined

4 cloves garlic, minced

2 tbsp olive oil

2 tbsp unsalted butter

Zest and juice of 1 lemon

1 cup fresh spinach, chopped

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

1/4 cup freshly grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the spaghetti or linguine according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Sauté the Shrimp: In a large skillet over medium heat, add the olive oil and unsalted butter. Once melted and hot, add the minced garlic and sauté for about 1 minute or until fragrant (do not let it brown).

      Add Shrimp: Add the shrimp to the skillet. Season with salt, pepper, and red pepper flakes (if using). Cook for 2-3 minutes on one side until they turn pink, then flip and cook for an additional 1-2 minutes.

        Combine Ingredients: Add the chopped spinach to the skillet, cooking until wilted. Pour in the lemon juice and zest, stirring to combine.

          Mix with Pasta: Add the cooked pasta and reserved pasta water to the skillet. Toss everything together until the pasta is well-coated and heated through. Adjust seasoning with more salt, pepper, or lemon juice as desired.

            Serve: Remove from heat and stir in the grated Parmesan cheese. Plate the pasta and garnish with freshly chopped parsley. Serve hot and enjoy!
