Ingredients

For the Meatballs:

1 lb ground beef (or a blend of beef and pork)

1/4 cup breadcrumbs (panko preferred)

2 green onions, finely chopped

2 cloves garlic, minced

1 tablespoon ginger, grated

1 tablespoon soy sauce

1 tablespoon gochujang (Korean chili paste)

1 tablespoon sesame oil

1 egg

1 tablespoon brown sugar

Salt and pepper to taste

Fresh cilantro for garnish (optional)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1-2 tablespoons gochujang (adjust based on spice preference)

1 teaspoon sesame oil

1 teaspoon rice vinegar

1 teaspoon honey

1 clove garlic, minced (optional)

Lime wedges for serving

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Mix the Meatball Ingredients: In a large mixing bowl, combine ground meat, breadcrumbs, green onions, garlic, ginger, soy sauce, gochujang, sesame oil, egg, brown sugar, salt, and pepper. Mix until all ingredients are well incorporated.

Shape the Meatballs: Using your hands, form the mixture into small meatballs, about 1.5 inches in diameter, and place them on the prepared baking sheet.

Bake the Meatballs: Bake in the preheated oven for 15-20 minutes or until they are cooked through and have a nice golden exterior.

Prepare the Spicy Mayo Dip: While the meatballs bake, in a small bowl, mix together mayonnaise, gochujang, sesame oil, rice vinegar, honey, and garlic if using. Adjust the level of gochujang based on your desired spice level.

Serve: Once the meatballs are ready, remove them from the oven and let them cool slightly. Serve them warm, garnished with fresh cilantro if desired, alongside the spicy mayo dip and lime wedges for an added zing.
