Korean BBQ Meatballs with Spicy Mayo Dip

For the Meatballs:

1 lb ground beef or pork

1/4 cup breadcrumbs

2 tbsp soy sauce

1 tbsp sesame oil

2 garlic cloves, minced

1 tsp ginger, grated

2 green onions, finely chopped

1 tbsp brown sugar

1 egg

Salt and pepper to taste

1 tbsp sesame seeds (for garnish)

For the Spicy Mayo Dip:

1/2 cup mayonnaise

1-2 tbsp Sriracha (adjust to your spice preference)

1 tsp lemon juice

1 tsp sesame oil

1 tsp honey

Prepare the Meatballs: In a large mixing bowl, combine the ground beef or pork with breadcrumbs, soy sauce, sesame oil, minced garlic, grated ginger, chopped green onions, brown sugar, egg, salt, and pepper. Mix until all the ingredients are just combined; be careful not to overmix.

    Form the Meatballs: Preheat your oven to 400°F (200°C). With your hands, roll the mixture into small meatballs, about 1 inch in diameter. Place them on a baking sheet lined with parchment paper.

      Bake the Meatballs: Bake the meatballs in the preheated oven for 20-25 minutes, or until they are cooked through and golden brown on the outside.

        Make the Spicy Mayo Dip: While the meatballs are baking, prepare the spicy mayo dip. In a small bowl, combine mayonnaise, Sriracha, lemon juice, sesame oil, and honey. Whisk until smooth and adjust the seasoning to your taste.

          Serve: Once the meatballs are cooked, remove them from the oven and let them cool slightly. Serve hot, garnished with sesame seeds and chopped green onions, alongside the spicy mayo dip.
