Ingredients

8 oz fettuccine or linguine pasta

1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

4 cloves garlic, minced

1 small onion, finely chopped

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup coconut milk

1 teaspoon allspice

1 teaspoon paprika

1 teaspoon jerk seasoning

Salt and pepper to taste

1 lime, juiced

Fresh cilantro or parsley, for garnish

Grated Parmesan cheese (optional)

Instructions

Cook the Pasta: In a large pot of boiling salted water, cook the fettuccine or linguine according to package instructions until al dente. Drain and set aside.

Sauté Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the onion, garlic, and bell peppers. Sauté until the onion is translucent and the peppers are tender, about 5 minutes.

Add Shrimp: Add the shrimp to the skillet and cook for about 3-4 minutes, or until they turn pink and opaque, stirring occasionally.

Make the Sauce: Stir in the coconut milk, allspice, paprika, and jerk seasoning. Simmer for about 5 minutes, allowing the flavors to meld and the sauce to thicken slightly. Season with salt and pepper to taste.

Combine: Add the cooked pasta to the skillet and toss to combine everything well, ensuring the pasta is coated in the creamy sauce. Add lime juice for a touch of brightness.

Serve: Divide the pasta among plates or bowls. Garnish with fresh cilantro or parsley and, if desired, sprinkle with grated Parmesan cheese for an extra layer of flavor.
