Italian Grinder Chicken Salad

Ingredients
  

2 cups cooked chicken, shredded or diced

1/2 cup cherry tomatoes, halved

1/4 cup red onion, finely diced

1/2 cup cucumber, diced

1/4 cup roasted red peppers, chopped

1/4 cup Kalamata olives, pitted and sliced

1/2 cup provolone cheese, cubed

1/4 cup fresh basil, chopped

1/4 cup fresh parsley, chopped

Dressing:

3 tablespoons olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and black pepper to taste

A pinch of red pepper flakes (optional for a bit of heat)

Instructions
 

In a large mixing bowl, combine the cooked chicken, cherry tomatoes, red onion, cucumber, roasted red peppers, Kalamata olives, provolone cheese, basil, and parsley.
