1 ½ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ cup granulated sugar

½ cup brown sugar, packed

1 large egg

½ cup unsalted butter, melted and slightly cooled

1 cup buttermilk

1 teaspoon vanilla extract

1 ½ cups peeled, cored, and diced apples (preferably a mix of Granny Smith and Honeycrisp)

½ cup chopped walnuts or pecans (optional)

2 tablespoons coarse sugar (for topping)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with non-stick spray.

    Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg. Set aside.

      Mix Sugars & Wet Ingredients: In a large bowl, whisk together the granulated sugar, brown sugar, and egg until well combined. Stir in the melted butter, buttermilk, and vanilla extract. Mix until smooth.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; small lumps are okay.

          Add Apples and Nuts: Fold in the diced apples and nuts, if using, ensuring they are evenly distributed throughout the batter.

            Fill Muffin Tins: Divide the batter evenly among the prepared muffin cups, filling each about ¾ full.
