2 large apples, peeled and diced (preferably Granny Smith or Honeycrisp)

2 cups unsweetened almond milk (or any milk of your choice)

1/4 cup maple syrup (or honey)

1/2 cup unsweetened applesauce

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup chopped walnuts (optional)

1/2 cup raisins or dried cranberries (optional)

Fresh apple slices for topping (optional)

Preheat the oven: Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish with non-stick spray or butter.

    Mix dry ingredients: In a large bowl, combine the rolled oats, ground cinnamon, nutmeg, baking powder, and salt. Stir until well combined.

      Prepare the wet ingredients: In a medium bowl, whisk together the almond milk, maple syrup, applesauce, and vanilla extract until smooth.

        Combine ingredients: Add the diced apples to the oat mixture, followed by the wet ingredients. Mix everything until the oats are evenly coated and the apples are well distributed. If using, fold in the chopped walnuts and raisins or cranberries.
