Ingredients

1 cup apple cider

1 cup all-purpose flour

1 cup whole wheat flour

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup unsweetened applesauce

1 large egg

2 tablespoons melted butter

1 teaspoon vanilla extract

For Coating:

1/4 cup unsalted butter, melted

1/2 cup granulated sugar

1 tablespoon ground cinnamon

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a donut pan lightly with cooking spray or butter.

Reduce the Apple Cider: In a small saucepan, bring the apple cider to a boil over medium heat. Reduce the heat and let it simmer until it reduces to about 1/2 cup (this takes about 10-15 minutes). Allow it to cool slightly.

Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt.

Mix Sugars: In another bowl, mix together the granulated sugar and brown sugar until well combined.

Combine Wet Ingredients: In a separate bowl, whisk together the applesauce, reduced apple cider, egg, melted butter, and vanilla extract until smooth.

Combine Mixtures: Add the wet mixture to the dry ingredients and stir gently until just combined. Do not overmix; a few lumps are fine.

Fill the Donut Pan: Transfer the batter into a piping bag or ziplock bag (with a corner snipped off) and pipe the batter into the prepared donut pan, filling each cavity about 3/4 full.

Bake the Donuts: Bake in the preheated oven for about 12-15 minutes or until a toothpick inserted in the center comes out clean.

Cool and Coat: Allow the donuts to cool in the pan for about 5 minutes before transferring them to a wire rack. While still warm, brush each donut with melted butter and then roll in a mixture of granulated sugar and cinnamon.

Serve: Serve these irresistible apple cider donuts warm with a cup of hot cider or your favorite beverage. Enjoy the flavors of fall!
