4 chicken thighs (bone-in, skin-on)

1/2 cup soy sauce

1/4 cup brown sugar

1/4 cup ketchup

1/4 cup pineapple juice

2 cloves garlic (minced)

1 teaspoon fresh ginger (grated)

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon red pepper flakes (optional)

1 green onion (sliced for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinade Preparation: In a large bowl, whisk together soy sauce, brown sugar, ketchup, pineapple juice, minced garlic, grated ginger, rice vinegar, sesame oil, and red pepper flakes until well combined.

    Marinate Chicken: Place the chicken thighs in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, seal the bag or cover the dish, and refrigerate for at least 2 hours (or overnight for more flavor).

      Grill Setup: Preheat your grill to medium-high heat (about 375°F to 400°F). Oil the grill grates lightly to prevent sticking.

        Grilling the Chicken: Remove the chicken from the marinade, allowing any excess to drip off. Discard the remaining marinade. Place the chicken thighs skin-side down on the grill. Cook for about 6-8 minutes.

          Flip and Cook: Turn the chicken over and reduce heat to medium. Continue grilling for another 6-8 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the skin is crispy and caramelized.
