Honey Lime Chicken & Avocado Rice Stack

For the Honey Lime Chicken:

1 lb (450g) boneless skinless chicken breasts

1/4 cup honey

Zest and juice of 2 limes

2 cloves garlic, minced

1 tsp chili powder

Salt and pepper to taste

1 tbsp olive oil

For the Avocado Rice:

1 cup uncooked jasmine rice

2 cups vegetable broth or water

1 ripe avocado, diced

1/4 cup cilantro, chopped

Juice of 1 lime

Salt to taste

For Assembly:

Sliced lime for garnish

Additional cilantro for garnish

Instructions
 

Marinate the Chicken:

    - In a medium bowl, whisk together honey, lime zest, lime juice, minced garlic, chili powder, salt, and pepper.

      - Add the chicken breasts to the marinade, ensuring they're well coated. Let marinate for at least 30 minutes (or up to 2 hours).

        Cook the Rice:

          - Rinse the jasmine rice under cold water until it runs clear.

            - In a saucepan, bring vegetable broth (or water) to a boil. Add the rinsed rice, reduce heat to low, cover, and simmer for about 15 minutes or until rice is tender and liquid is absorbed.

              - Remove from heat and let sit for 5 minutes before fluffing with a fork. Stir in diced avocado, cilantro, lime juice, and a pinch of salt. Keep warm.

                Cook the Chicken:

                  - Heat olive oil in a skillet over medium-high heat. Remove the chicken from the marinade and cook for 5-7 minutes on each side, or until the chicken is cooked through and caramelized.

                    - Let the chicken rest for a few minutes before slicing it into strips.

                      Assemble the Stack:

                        - On a plate, create a base layer of the avocado rice, pressing it down slightly to form a solid base.

                          - Add a layer of sliced honey lime chicken on top of the rice.

                            - Repeat the layers to create a tall stack if desired.

                              - Garnish with slices of lime and additional cilantro on top.

                                Serve:
