Honey Garlic Butter Roasted Carrots

1 lb (450g) baby carrots, peeled and trimmed

3 tablespoons unsalted butter

2 tablespoons honey

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a medium saucepan over low heat, melt the butter. Once melted, stir in the honey and minced garlic. Cook for about 1-2 minutes until fragrant, then remove from heat.

      In a large mixing bowl, add the peeled baby carrots. Pour the honey garlic butter mixture over the carrots and sprinkle with salt, black pepper, and thyme. Toss well until the carrots are evenly coated.

        Spread the coated carrots in a single layer on a baking sheet lined with parchment paper.

          Roast in the preheated oven for 25-30 minutes, or until the carrots are tender and slightly caramelized. Be sure to toss them halfway through for even cooking.

            Once roasted, remove the carrots from the oven. Taste and adjust the seasonings if necessary.

              Garnish with chopped fresh parsley before serving.
