2 lbs boneless, skinless chicken thighs

1/2 cup honey

1/4 cup chipotle peppers in adobo sauce, minced

1/4 cup soy sauce

2 tablespoons apple cider vinegar

4 cloves garlic, minced

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon ground coriander

Salt and pepper to taste

1 cup chicken broth (for Instant Pot or as needed for slow cooker)

8 small tortillas (corn or flour, your choice)

1 cup red cabbage, shredded

1 avocado, sliced

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare Chicken Mixture:

    - In a medium bowl, whisk together honey, minced chipotle peppers, soy sauce, apple cider vinegar, garlic, cumin, smoked paprika, ground coriander, salt, and pepper.

      Slow Cooker Method:

        - Place the chicken thighs in the slow cooker.

          - Pour the honey chipotle mixture over the chicken, ensuring it's well-coated.

            - Add chicken broth to the slow cooker for moisture.

              - Cover and cook on low for 6-8 hours or on high for 3-4 hours until the chicken is tender and easily shredded.

                Instant Pot Method:

                  - Place the chicken thighs in the Instant Pot.

                    - Pour the honey chipotle mixture over the chicken.

                      - Add 1 cup of chicken broth.

                        - Close the lid, set the pressure valve to sealing, and select Manual/Pressure cook for 10 minutes.

                          - Once done, allow for a natural release for 10 minutes before quick-releasing the remaining pressure.

                            Shred the Chicken:

                              - Once the chicken is cooked, shred it with two forks right in the slow cooker or Instant Pot. Mix the shredded chicken with the sauce.

                                Assemble Tacos:

                                  - Warm the tortillas in a skillet or microwave.

                                    - Place a generous amount of shredded chicken on each tortilla.

                                      - Top with shredded red cabbage, avocado slices, and a sprinkle of fresh cilantro.
