High Protein Ground Turkey Stuffed Sweet Potato

4 medium sweet potatoes

1 lb ground turkey

1 small onion, finely chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 tsp ground cumin

1 tsp smoked paprika

1/2 tsp chili powder (adjust to taste)

Salt and pepper to taste

1 cup shredded cheese (cheddar or pepper jack)

2 tbsp olive oil

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash and prick the sweet potatoes with a fork. Place them on a baking sheet and roast for 45-60 minutes, or until tender.

      In a large skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until the onion becomes soft and translucent, about 3-4 minutes.

        Add the ground turkey to the skillet, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 6-8 minutes.

          Stir in the diced bell pepper, black beans, corn, cumin, smoked paprika, chili powder, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld together.

            Once the sweet potatoes are done, carefully slice them in half lengthwise. Fluff the insides with a fork to create space for the filling.

              Generously spoon the turkey mixture into each sweet potato half, then sprinkle with shredded cheese.

                Place the stuffed sweet potatoes back in the oven for an additional 5-10 minutes, or until the cheese is melted and bubbly.

                  Remove from the oven, garnish with fresh cilantro, and serve with lime wedges on the side for a burst of flavor.
