Hawaiian Shoyu Chicken

Ingredients
  

4 bone-in, skin-on chicken thighs

1/2 cup soy sauce (preferably shoyu)

1/4 cup brown sugar

1/4 cup rice vinegar

1 tablespoon sesame oil

4 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/2 teaspoon black pepper

1/4 cup green onions, chopped (for garnish)

1 tablespoon sesame seeds (for garnish)

Cooked rice, for serving

Sliced cucumbers, for serving (optional)

Instructions
 

Marinate the Chicken: In a large bowl, combine soy sauce, brown sugar, rice vinegar, sesame oil, minced garlic, minced ginger, and black pepper. Mix until the sugar is dissolved. Add the chicken thighs to the mixture and ensure they are well-coated. Cover and marinate in the refrigerator for at least 1 hour, preferably overnight for maximum flavor.

    Preheat the Oven: Preheat your oven to 375°F (190°C).

      Prepare the Baking Dish: Remove the chicken from the marinade and reserve the marinade for later use. Place the chicken thighs skin-side up in a baking dish.

        Bake the Chicken: Bake the chicken in the preheated oven for 30 minutes. After 30 minutes, baste the chicken with the reserved marinade and continue baking for an additional 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the skin is golden brown.

          Prepare the Sauce: While the chicken is baking, pour the remaining marinade into a small saucepan. Bring to a boil over medium-high heat and let it simmer for about 5 minutes. This will thicken the sauce.

            Garnish and Serve: Once the chicken is done, remove it from the oven and let it rest for a few minutes. Drizzle with the thickened sauce and garnish with chopped green onions and sesame seeds. Serve over a bed of rice with sliced cucumbers on the side, if desired.
