12 Hawaiian rolls, sliced in half

4 large eggs

1 cup milk (or coconut milk for a tropical twist)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1 tablespoon brown sugar

½ teaspoon salt

1 tablespoon butter (for the skillet)

Fresh pineapple chunks, for serving

Maple syrup, for drizzling

Powdered sugar, for garnish

Optional: shredded coconut, for topping

Prep the Rolls: Slice the Hawaiian rolls in half and set them aside. If they're a day or two old, they will soak up the egg mixture better.

    Mix the Batter: In a large bowl, whisk together the eggs, milk, vanilla extract, ground cinnamon, brown sugar, and salt until well combined.

      Soak the Rolls: Dip each half of the Hawaiian roll into the egg mixture, allowing them to soak for about 20-30 seconds on each side. You want them to absorb some of the mixture but not become mushy.

        Heat the Skillet: In a large skillet or griddle, melt the butter over medium heat until it’s sizzling.

          Cook the French Toast: Place the soaked rolls on the skillet, cut side down. Cook for about 3-4 minutes on each side, or until the golden brown and crispy. You may need to do this in batches to avoid overcrowding the pan.

            Serve: Remove the French toast from the pan and stack them on plates. Top with fresh pineapple chunks, a dusting of powdered sugar, a drizzle of maple syrup, and, if desired, a sprinkle of shredded coconut.
