1 lb ground turkey

2 cups broccoli florets

1 bell pepper, sliced (any color)

1 cup snap peas

1 medium onion, thinly sliced

3 cloves garlic, minced

1 tablespoon ginger, minced

1/4 cup low-sodium soy sauce

2 tablespoons honey or maple syrup

2 tablespoons rice vinegar

1 tablespoon sesame oil

1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)

2 tablespoons vegetable oil

Sesame seeds (for garnish)

Cooked rice or quinoa (for serving)

Prep the Sauce: In a small bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, and sesame oil. Set aside.

    Cook the Turkey: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add ground turkey and cook until browned and cooked through, about 5-7 minutes. Use a spatula to break it into smaller pieces as it cooks.

      Add Aromatics: Once the turkey is cooked, add in the minced garlic and ginger, stirring for about 1 minute until fragrant.
