Ground Turkey Sweet Potato Skillet

This one-pan dish combines lean ground turkey with sweet potatoes, onion, and bell pepper, all seasoned perfectly with smoked paprika and cumin. Add in some fresh spinach for a healthy boost! Ingredients
  

1 pound ground turkey

2 medium sweet potatoes, diced

1 medium onion, chopped

2 cloves garlic, minced

1 bell pepper (any color), diced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon dried oregano

Salt and pepper to taste

2 tablespoons olive oil

1 cup spinach (optional, for added nutrition)

Fresh parsley for garnish (optional)

Instructions
 

In a large skillet, heat the olive oil over medium heat.

    Add the chopped onion and bell pepper, sautéing until they are soft (about 3-4 minutes).

      Stir in the minced garlic and cook for another minute until fragrant.

        Increase the heat slightly and add the ground turkey. Break it up with a spoon and cook until browned, about 5-7 minutes.

          While the turkey is cooking, add the diced sweet potatoes to the pan, along with the smoked paprika, cumin, oregano, salt, and pepper.

            Pour in a splash of water (about ¼ cup) and cover the skillet with a lid. This will help steam the sweet potatoes, making them tender. Cook for about 10-15 minutes or until the sweet potatoes are fork-tender, stirring occasionally.

              If using spinach, stir it in during the last minute of cooking until wilted.

                Taste and adjust seasonings as needed. Remove from heat.

                  Garnish with fresh parsley if desired and serve warm.
