Ground Turkey Sweet Potato Casserole

1 lb ground turkey

2 medium sweet potatoes, peeled and diced

1 cup diced yellow onion

2 cloves garlic, minced

1 cup bell peppers (any color), diced

1 cup corn (fresh, frozen, or canned)

1 can (15 oz) black beans, drained and rinsed

1 tsp ground cumin

1 tsp smoked paprika

½ tsp chili powder

Salt and pepper to taste

½ cup chicken broth (low sodium)

1 cup shredded sharp cheddar cheese (optional)

Olive oil for cooking

Fresh cilantro for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Ground Turkey: In a large skillet, heat a drizzle of olive oil over medium heat. Add the diced onion and garlic and sauté for about 2-3 minutes until translucent. Add the ground turkey, breaking it apart with a spoon, and cook until browned and no longer pink, about 5-7 minutes. Season with salt, pepper, cumin, smoked paprika, and chili powder.

      Prepare the Sweet Potatoes: While the turkey cooks, boil the diced sweet potatoes in a pot of salted water for about 8-10 minutes until tender. Drain and set aside.

        Combine Ingredients: In the skillet with the cooked turkey, add the bell peppers, corn, black beans, chicken broth, and the boiled sweet potatoes. Stir everything together and let it simmer for an additional 5 minutes, allowing the flavors to meld.

          Assemble the Casserole: Transfer the mixture into a greased 9x13 inch baking dish. If desired, sprinkle a cup of shredded cheddar cheese evenly on top.

            Bake: Cover the casserole with aluminum foil and bake in the preheated oven for 20 minutes. After 20 minutes, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
