1 lb ground turkey

2 large bell peppers (red and yellow), diced

1 small onion, chopped

2 cloves garlic, minced

1 cup canned diced tomatoes, drained

1 cup corn (fresh or frozen)

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons olive oil

Fresh cilantro or parsley for garnish (optional)

Cooked quinoa or rice, for serving

Prepare the Vegetables: Begin by washing and dicing the bell peppers and chopping the onion. Mince the garlic and set aside.

    Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Once hot, add the ground turkey. Cook for about 5-7 minutes, stirring occasionally until the turkey is browned and fully cooked. Drain excess fat if necessary.

      Sauté the Aromatics: Add the chopped onion and minced garlic to the skillet with the turkey. Cook for an additional 3-4 minutes until the onion becomes translucent.

        Add the Peppers: Stir in the diced bell peppers and continue to cook for another 3-5 minutes until they soften slightly.

          Add Remaining Ingredients: Pour in the drained diced tomatoes, corn, chili powder, cumin, smoked paprika, salt, and pepper. Mix well to combine all ingredients.
