1 lb ground beef (preferably grass-fed)

1 medium zucchini, diced

1 medium sweet potato, peeled and diced into small cubes

1 medium onion, chopped

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon cumin

Salt and black pepper to taste

2 tablespoons olive oil

Fresh parsley or cilantro for garnish (optional)

Grated cheese (optional)

Prepare the Sweet Potatoes: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced sweet potatoes and season with salt and black pepper. Cook for about 5-7 minutes, stirring occasionally, until they start to soften.

    Cook the Onion and Garlic: Push the sweet potatoes to one side of the skillet. Add the remaining tablespoon of olive oil to the empty side and then add the chopped onion. Sauté for about 2-3 minutes until the onion becomes translucent. Add the minced garlic and cook for an additional 1 minute.

      Brown the Ground Beef: Add the ground beef to the skillet, breaking it up with a spoon. Sprinkle in the paprika and cumin. Cook until the beef is browned and fully cooked, about 5-7 minutes. Stir everything together so the flavors can meld.

        Add Zucchini: Once the beef is cooked, add the diced zucchini to the skillet. Stir well and allow to cook for another 3-4 minutes until the zucchini is tender but still has a slight crunch.
